Low Carb Meatloaf
Meatloaf is an incredible dinner option that can be made with a variety of ingredients. The first and most important ingredient is the meat. We suggest using only grass-fed ground beef. Ground turkey or chicken can be used as well. The way to make the recipe low carb is to choose a different binder other than flour or bread crumbs such as almond flour. It is also possible to eliminate the binder completely and create a cheesey meatloaf using cream cheese and motzarella!

Utilizing a meatloaf pan like the one shown below makes baking easy, but you can use other pans as well. Sometimes using muffin pans makes fun mini sized meat loaf servings that are great for taking on the go for lunches!

1 pound grass-fed ground beef

2 eggs

1/2 onion finely chopped

1 clove garlic or garlic powder

1/2 cup shredded cheddar or mozzarella cheese

1/4 cup powdered Parmesan cheese

1 teaspoon pink salt

1 teaspoon ground black pepper

Preheat oven to 375 degrees.

Finely chop the onion and garlic unless you are using powder.

Place the grass-fed ground beef into a large mixing bowl and add in all ingredients: eggs, almond flour, garlic and onions, cream cheese, cheddar and/or mozzarella cheese, Parmesan cheese, Worcestershire sauce, ketchup, pink salt, and pepper.

Use a fork or your hands to mix ingredients into the meat until you reach a fairly smooth consistency that seems to stick together.

Spoon the mixture into a pre oiled meatloaf pan and place in the oven.

Bake for 30 minutes.

Take meatloaf out of the oven, coat the top with the bbq sauce, and place the meatloaf back in the oven.

Increase the oven temperature to 425 and bake for an additional 20 - 25 minutes.

Remove the meatloaf from the oven and let it rest for 5 - 10 minutes before serving. This will help everything stay together when you slice into it.
Adding in cream cheese and motzarella into the mix before baking makes for a super creamy and delicious meatloaf!
